Broccoli (florets)
Description
Broccoli (florets) have an intense green color and a compact structure resembling miniature trees; the taste is fresh, slightly sweet-bitter with subtle nutty notes after cooking. They are low in calories, rich in fiber, vitamins C, K, and A, as well as folic acid, and minerals such as potassium and iron; they contain sulfur compounds (glucosinolates, sulforaphane) with anti-inflammatory and anti-cancer properties, supporting digestion, the immune system, and bone health. In the kitchen, broccoli works well in various forms: steamed, roasted, sautéed, in stir-fries, soups, salads, casseroles, or as pesto; they pair well with garlic, lemon, olive oil, cheese, nuts, and soy sauce. They should be stored in the refrigerator, not washed before storing, kept in a perforated bag or container, and used within 4–7 days; for longer storage, blanch and freeze.
