Description
Unsweetened cocoa powder is a finely ground, intensely brown powder with a distinctly bitter, slightly tart flavor profile; available in natural form it provides fruity acidity, while "Dutch-processed" cocoa is milder and smoother. From a nutritional standpoint, cocoa is relatively low in calories, rich in fiber, iron, magnesium, and antioxidant flavonoids, which support cardiovascular health, improve insulin sensitivity, and enhance mood, although it also contains small amounts of caffeine and oxalates. In the kitchen, it works well in desserts and baked goods, as well as in hot drinks, smoothies, mole sauces, or as a spice for meats and chili, adding depth of flavor without sugar. Store cocoa tightly sealed in a dry, cool, and dark place, away from moisture and strong odors; optimal shelf life is usually 6–12 months.
