Description

Berbere is an intensely red-brown powder with a complex, spicy, and slightly smoky aroma featuring notes of hot pepper, coriander, cumin, cinnamon, and bitter fenugreek; the flavor is spicy, earthy, and slightly sweet, with warmth from the spices. As a spice blend, it has low caloric value, provides antioxidants (from pepper and ginger), and compounds with anti-inflammatory and digestive-supporting properties (cumin, fenugreek), while capsaicin may boost metabolism and improve circulation. Berbere is traditionally used in Ethiopian wots, stews, lentils, and goulashes, works well as a marinade, dry rub for roasted vegetables and meats, and an addition to rice or yogurt sauces, enriching dishes with aroma and heat. It should be stored in a tightly sealed container in a cool, dark, and dry place; for freshness, use within 6–12 months, and add a pinch of the ground blend just before cooking.
