Carrot peels
Description
Carrot peels have an intense, slightly sweet-earthy flavor and a vibrant orange color, often with a thin, fibrous texture. They are aromatic and add sweetness and depth to dishes, especially when used in broths or roasting, and when prepared properly, they can become crispy as a snack. Nutritionally, peels are a concentrated source of fiber, beta-carotene (provitamin A), potassium, vitamin K, and antioxidants, supporting vision, immunity, and digestion. In the kitchen, they are great for making vegetable broths, bases for soups and sauces, pesto, marinades, peel chips, and as an addition to smoothies and baking, adding sweetness and color. For storage, it is best to keep them in an airtight container in the refrigerator and use them within a few days, or after a brief blanching, freeze or dry them to extend their shelf life. When using peels, it is advisable to wash them well, and if possible, choose carrots from organic farming.
