Oil
Description
Oil is a clear or slightly golden liquid with a smooth, often delicate or nutty flavor depending on the source; it can have a neutral taste (e.g., canola) or a strong flavor (olive oil). It is a rich source of energy, mainly providing monounsaturated and polyunsaturated fats, vitamin E, and unsaturated fatty acids essential for heart and nervous system health; moderate use supports the absorption of fat-soluble vitamins and may lower levels of "bad" cholesterol. In the kitchen, oil is suitable for frying, baking, marinades, dressings, and finishing dishes, with the type chosen based on cooking temperature and flavor intensity. Store in airtight bottles away from light and heat, in a cool, dark place; some oils with a shorter shelf life (e.g., flaxseed) require refrigeration.
