Description
Spelt is a grain with a light beige to golden color and a slightly oval shape, with a delicately nutty, sweet flavor and a meaty, slightly chewy texture when cooked. It is rich in fiber, plant protein, B vitamins, and minerals such as magnesium, iron, and zinc, and it has a lower glycemic index than many refined grains, which promotes a feeling of fullness and stabilizes blood sugar levels; however, it is important to remember that it contains gluten. In the kitchen, spelt works well in bread, pasta, grains, salads, soups, and as a base for risotto or pilaf, as well as in the form of flour for cakes and pancakes. Store the grain tightly in a dry, cool place, and it is best to keep flour or cracked grains in the refrigerator or freezer to prevent rancidity and pests.
