Description
Dried lemon balm leaves (lemon balm) have a delicate, citrus-herb aroma with a hint of sweetness and a light minty freshness; they resemble small, crumbling片 leaves in shades of green to olive, often slightly crumpled. In terms of ingredients, they contain essential oils (mainly citral), flavonoids, and rosmarinic acid, as well as trace amounts of vitamins and minerals, which contribute to their antioxidant properties, tension-relieving effects, and digestive support; lemon balm may also help reduce mild stress-related ailments and sleep issues. In the kitchen, dried lemon balm works well in infusions, syrups, and liqueurs, as an addition to desserts, salads, dressings, marinades for fish and poultry, and in herbal blends and cocktails, where it enhances fresh, citrus notes. It should be stored in an airtight, opaque container in a cool, dry, and dark place, away from moisture and heat sources; whole leaves retain their aroma longer than ground ones, and optimal shelf life is usually 6–12 months.
