Dried papaya
Description
Dried papaya is a sweet, tropical fruit with an intense orange-red interior. When dried, it becomes more concentrated, slightly chewy, and glossy, with a distinct aroma of mango and apricot. The taste is very sugary, with a gentle tartness and a tropical note that pairs well with other dried fruits. As an energy ingredient, it provides fiber, natural sugars, beta-carotene (a precursor to vitamin A), potassium, and antioxidants, while partially retaining the properties of the enzyme papain that aids digestion. It works well as a snack, an addition to muesli, trail mixes, cakes, desserts, salads, or sauces and salsas, as well as on a cheese board. Store in an airtight container in a cool, dry, and dark place; after opening, it's best kept in the refrigerator, and longer storage can be extended by freezing.
