Description
Fresh rosemary sprigs have an intense, resinous-spruce aroma with citrus notes and a slightly peppery aftertaste; they resemble small coniferous twigs with narrow, dark green, shiny leaves and tiny purple flowers. The plant provides few calories but is a source of antioxidants (including rosmarinic acid), vitamins A and C, and minerals such as iron and calcium, which contribute to anti-inflammatory effects, aid digestion, and provide overall support for the immune system. In the kitchen, rosemary pairs well with roasted meats (lamb, chicken), potatoes, grilled vegetables, focaccia bread, oils and marinades, as well as flavoring sauces and broths; sprigs can be used whole, and the leaves can be removed before serving. Store fresh sprigs wrapped in a damp paper towel in the refrigerator or placed in a glass of water, changing the water every few days; they can also be frozen or dried for longer shelf life.
