Sesame oil (from roasted sesame)
Description
Toasted sesame oil has an intense, nutty-toasty aroma and a dark amber color, which adds depth of flavor to dishes even in small amounts. Its taste is pronounced, slightly sweet, and characteristically roasted, which is why it is most often used as a finishing oil rather than for prolonged frying. Nutritionally, it is energy-dense, rich in monounsaturated and polyunsaturated fatty acids, vitamin E, and antioxidants such as sesamol and phytosterols, which may support heart health and have anti-inflammatory properties. In the kitchen, it pairs well with Asian dishes, marinades, sauces, salads, and as an aromatic finish for soups and vegetable dishes; due to its low smoke point, it is better to add it after cooking or for brief sautéing. Store in a cool, dark place in a tightly sealed bottle; once opened, it is advisable to keep it in the refrigerator to prolong freshness and prevent rancidity.
