Cayenne pepper
Description
Cayenne pepper is a finely ground, intensely red powder with a sharp, burning taste and subtle fruity notes, along with a slightly smoky aftertaste. Visually, it adds a vivid color and spicy character to dishes; its heat is measured in thousands of Scoville units. It contains capsaicin, a natural compound responsible for its warming effect, as well as vitamins A and C and antioxidants that support metabolism, circulation, and may alleviate inflammation and pain when used in moderation. In the kitchen, cayenne is used sparingly in soups, sauces, marinades, Mexican dishes, Cajun cuisine, and curry, as well as an addition to chocolate or citrus. Store in an airtight container in a cool, dark place away from moisture; whole dried peppers lose their aroma more slowly than ground spice, which retains freshness best for about 6–12 months.
