Red bell pepper
Description
Red bell pepper is a sweet, juicy, and crunchy vegetable with an intensely red, shiny skin and meaty flesh that adds color and a delicate sweetness to dishes. It is low in calories, rich in vitamin C and provitamin A (beta-carotene), contains fiber, B vitamins, and antioxidants that support immunity, eye health, and the cardiovascular system, and have anti-inflammatory properties. Regular consumption also helps with iron absorption and maintaining healthy skin. In the kitchen, red bell pepper works well raw in salads, sliced for dips, roasted or grilled as an addition to sandwiches, pasta, soups, sauces, and one-pot dishes; it pairs excellently with cheeses, herbs, meat, and fish. Store whole, unwashed fruits in the refrigerator in the vegetable drawer or in a perforated bag for 1–2 weeks; after cutting, keep tightly in a container lined with a paper towel and use within a few days. It can also be blanched and frozen for longer storage.
