Description
Parmesan (or another hard cheese) is an intense, umami cheese with a nutty-salty, slightly spicy flavor, a grainy, crumbly texture, and a color ranging from straw to golden; tyrosine crystals are often visible, indicating long aging. Nutritionally, it is dense in protein, calcium, phosphorus, vitamin A, and B12, as well as fat and salt, which supports bone health and muscle recovery, although it should be consumed in moderation due to its calorie and sodium content. Culinary applications are very wide: it is perfect for grating over pasta, risotto, soups, and salads, for enriching sauces, casseroles, or crumbling over snacks with wine and fruits. Store in the refrigerator wrapped in parchment and loosely in foil or a container, in the cool part of the cheese drawer; it can also be frozen grated for further cooking.
