Fresh raspberries
Description
Fresh raspberries are small, juicy fruits with an intense red color (sometimes ruby or raspberry-pink), a delicate, slightly fluffy texture, and a sweet-tart, aromatic flavor with floral notes; ripe specimens are firm, fragrant, and easily detach from the stem. They are low in calories, rich in fiber, vitamin C, vitamin K, manganese, and strong antioxidants (including ellagitannins), which support immunity, heart health, blood sugar control, and digestion, and have anti-inflammatory properties. In the kitchen, they are suitable for desserts, jams, sorbets, smoothies, salads, sauces for meats and cheeses, and as a fresh addition to yogurts and baked goods; they pair excellently with citrus fruits, vanilla, chocolate, and soft cheeses. Store them in the refrigerator unwashed and unsweetened until use, in a flat container lined with paper towels, consuming within 2–3 days; for longer storage, freeze them spread out on a tray, then pack into bags.
