Description

Gochujang is a Korean thick paste with an intensely red-brown color and a complex flavor: spicy, umami, and slightly sweet, with distinct notes of fermented grains and chili (gochugaru). The consistency is smooth and sticky, making it convenient for spreading and mixing with other ingredients. Nutritionally, it mainly provides carbohydrates and small amounts of protein, is low in fat, contains bioactive compounds from chili, including capsaicin, as well as B vitamins and beta-carotene; due to fermentation, it may support the gut microbiome, although care should be taken with its salt content. Gochujang works great as a base for marinades, glazes, bibimbap sauces, stews, and soups, as well as an addition to dressings and dips, adding depth and spiciness to dishes. Once opened, the paste should be stored in the refrigerator in an airtight container, avoiding contamination with a spoon, and used within a few months; unopened packaging should be kept in a cool, dark place.
