Plum preserves
Description
Plum preserves are a thick, glossy jam with a deep mahogany to brown color and an intense, balanced flavor — sweet with a subtle tartness and a slightly caramelized aftertaste resulting from long cooking. The texture can be creamy or contain pieces of fruit, which adds substance and the aroma of cooked plums. Nutritionally, the preserves mainly provide carbohydrates from natural sugars and dietary fiber; they are also a source of antioxidants (phenols and anthocyanins) as well as vitamins and trace elements in small amounts, especially potassium. Regular, moderate consumption may support digestion due to the fiber and have antioxidant effects. In the kitchen, preserves pair well with bread, pancakes, dumplings, and baked goods, as a filling for cakes, an addition to cheeses, meat glazes, or yogurts and cereals. They should be stored in closed, clean jars in a cool, dark place; once opened, they should be kept in the refrigerator and consumed within a few weeks, and they can also be frozen for longer storage.
