Description
Light miso paste (shiro) is a delicate, creamy paste with a light beige to yellowish color and a mild, slightly sweet flavor with a distinct umami accent. It is made from shorter fermented soybeans with a higher proportion of koji rice, which gives it a subtler aroma and a smooth texture that easily dissolves in liquids. Nutritionally, miso is a source of plant protein, B vitamins, and minerals such as manganese and zinc, and unpasteurized varieties contain beneficial bacteria that support gut flora. However, it is important to note its relatively high sodium content and to use it in moderation. In the kitchen, shiro miso works excellently in light soups, dressings, marinades, glazes for fish and vegetables, and sauces for pasta and tofu, where it adds subtle umami without overwhelming sharpness. Once opened, store it in a tightly sealed container in the refrigerator, protecting it from contamination and prolonged heating, which will help maintain freshness for several months.
