Description

Light miso paste (shiro) is a delicate, creamy paste with a light beige to yellowish color and a mild, slightly sweet flavor with a distinct umami accent. It is made from shorter fermented soybeans with a higher proportion of koji rice, which gives it a subtler aroma and a smooth texture that easily dissolves in liquids. Nutritionally, miso is a source of plant protein, B vitamins, and minerals such as manganese and zinc, and unpasteurized varieties contain beneficial bacteria that support gut flora.
