Description
Ground black pepper has a strong, sharp, and slightly woody-spicy aroma with a delicate bitterness, and its appearance is a fine, dark gray powder that intensifies the aroma of dishes right after grinding. Due to its piperine content, it provides a burning, warming sensation on the tongue, which complements fatty and salty ingredients well. Nutritionally, pepper is low in calories and provides small amounts of minerals and phytochemicals, primarily piperine, which has anti-inflammatory and antioxidant effects and improves the absorption of certain compounds, such as curcumin. In the kitchen, it is versatile — for meats, soups, sauces, salads, eggs, marinades, and vegetable dishes, often added as a spice at the end of cooking. It should be stored in an airtight container in a cool, dry, and dark place; whole peppercorns retain their aroma much longer than ground pepper.
