Toasted pine nuts (optional)
Description
Pine nuts are roasted and have a small, elongated shape and a creamy-golden color. Roasting brings out their buttery, slightly resinous, and nutty flavor with a pleasant crunch. They are calorie-dense but nutritious: rich in monounsaturated fats, protein, vitamin E, magnesium, manganese, and zinc, as well as antioxidants that support heart health, cognitive functions, and a feeling of fullness; it's important to keep portion sizes moderate and be aware of potential nut allergies. They pair wonderfully with pesto, salads, pasta, roasted vegetables, fish, and desserts, where roasting adds depth and aroma; they can also be sprinkled as a garnish. Store them tightly in a cool, dark place, preferably in the refrigerator or freezer, to prevent rancidity — at room temperature, they will stay fresh for only a few weeks.
