Description
Podkozak is a wild mushroom from the boletus family with a smooth, usually brownish cap and a massive, light stem covered with delicate, darker scales. It has a mild, slightly nutty and earthy flavor, with a pleasant mushroom aroma, less intense than that of the noble boletus, making it versatile in the kitchen. Podkozak is low in calories, provides plant-based protein, fiber, and B vitamins, as well as minerals such as potassium and selenium, which support the immune system and metabolism. In the kitchen, it works well when stewed, sautéed with butter or oil, as an addition to soups, sauces, risottos, and fillings; it is also suitable for drying and pickling. Store it in the refrigerator in a paper bag or perforated container, do not wash before storing, use within a few days, or preserve by drying or quick blanching and freezing.
