Brown shimeji mushrooms
Description
Brown shimeji mushrooms are small mushrooms with tiny, conical caps in a warm shade of brown and slender, whitish stems. They have a firm, slightly crunchy texture and a subtle umami flavor with a delicate, nutty note that becomes more pronounced after a brief sauté. They look decorative in bunches and maintain their structure during cooking. They are low in calories, a source of plant protein, fiber, potassium, selenium, and B vitamins, and after exposure to light, also vitamin D. They contain polysaccharides and antioxidants that support the immune system and metabolic health. In the kitchen, shimeji mushrooms pair well with Asian dishes, stir-fries, soups, risottos, pasta, and omelets, complementing soy sauces, ginger-garlic sauces, and rich additions. Store them in the refrigerator in a paper bag or a breathable container, do not wash before storing, and use within 5–7 days; they can also be blanched and frozen for longer storage.
