White shimeji
Description
White shimeji are delicate, slender mushrooms with small, hemispherical caps and long, thin stems, characterized by a creamy-white color. They have a subtle, slightly nutty flavor with a pleasant umami note and a firm, slightly crunchy texture after a brief sauté. They are low in calories, rich in plant protein, fiber, and B vitamins, as well as minerals such as potassium and selenium. They contain polysaccharides and beta-glucans with potential immunomodulating properties and beneficial effects on gut microbiota; when consumed in moderation, they support a low-fat diet and balanced nutrition. In the kitchen, white shimeji are great for stir-fries, soups, risottos, pasta, and omelets, fitting well with Asian dishes, sauces, and braised vegetables. Store in the refrigerator in a perforated package, do not wash before storing, use within 5–7 days; they can also be sautéed and frozen for longer storage.
