Description

Large portobello mushrooms are meaty, intensely umami mushrooms with a wide, dark brown cap and distinct gills; when grilled, they take on a deep, slightly nutty aroma and a juicy texture reminiscent of meat. Due to their firm structure, they are excellent as a standalone ingredient replacing animal protein. They are low in calories, rich in fiber, plant protein, and B vitamins, as well as minerals such as potassium and selenium, which support metabolism and the immune system. In the kitchen, they are great for grilling, stuffing, frying, and baking; perfect for burgers, salads, risottos, and Asian dishes, they absorb marinades and spices well. Store in the refrigerator in a paper bag or loosely wrapped, damp mushrooms should be dried with a cloth instead of rinsed, use within 3–5 days, and store longer after cooking.
