Prażona kukurydza (cancha serrana)
Description
Roasted corn, known in Peru as cancha serrana, consists of crunchy, golden kernels with a distinctly nutty, slightly smoky aroma and a pleasantly firm texture that maintains its crunch for a long time. It resembles large, puffed corn kernels with uneven edges, often served as a snack or as an addition to salads and soups. Nutritionally, it is a good source of complex carbohydrates, fiber, a small amount of protein, and minerals such as magnesium and iron, as well as antioxidants found in the kernel's husk. It may aid digestion and provide lasting energy with moderate caloric content. Roasted corn is used as a standalone snack, a topping for salads, and as an accompaniment to seafood dishes or South American cuisine. It is best stored in an airtight, dry container in a cool place, away from moisture, which helps maintain its crunch and aroma for several weeks.
