Nutmeg (grated)
Description
Grated nutmeg has a warm, slightly sweet and spicy aroma with hints of nutmeg, cinnamon, and clove; in its grated form, it takes on a light brown powder with a more intense but fleeting scent than the whole spice. It contains essential oils (including myristicin), antioxidants, and small amounts of minerals and vitamins, which in moderate amounts can support digestion and have anti-inflammatory effects, although it should be used sparingly due to the strong action of the oils. In the kitchen, grated nutmeg is versatile: it complements sweet dishes (cakes, creams, eggnog-type drinks), milk sauces and béchamel, creamy soups, potato dishes, meat, and vegetable casseroles. It should be stored tightly closed in a dry, cool, and dark place; to preserve its aroma, it is better to keep whole nuts and grate them as needed.
