Description
Fresh mixed mushrooms, such as porcini, boletus, and button mushrooms, are characterized by an earthy-forest aroma with a distinct umami and a variety of textures—from the meaty caps of porcini to the delicate button mushrooms. They attract attention with their natural shades of brown and cream, along with regular caps and stems that give dishes a rustic character. They are low in calories, rich in plant protein, fiber, B vitamins (niacin, riboflavin), minerals such as potassium and selenium, and antioxidant compounds; when exposed to light, they can provide vitamin D. In the kitchen, they work well in soups, risottos, sauces, stews, and fried dishes, as an addition to meats, pasta, omelets, and vegetarian dishes. Store in the refrigerator in a paper bag or breathable container, do not wash them extensively before storing, clean with a brush or damp cloth, and use within a few days; they can be stored longer when dried or previously sautéed and frozen.
