Kelp powder (kombu)
Description
Kelp powder (kombu) is finely ground brown seaweed with an intense, marine aroma and a dark green-brown color. The flavor is deeply umami, slightly salty and mineral, with a delicate sweetness, making it an effective flavor enhancer without adding fat. As a seaweed concentrate, the powder provides iodine, magnesium, calcium, as well as fiber and biologically active compounds such as alginates and fucoidans, which support thyroid function, digestion, and may help regulate cholesterol; due to its high iodine content, it should be used in moderation and consulted with in cases of thyroid disorders. In the kitchen, it is used to prepare broths (e.g., dashi), soups, sauces, dressings, marinades, and as an addition to rice, vegetables, and plant-based dishes to enhance umami. It should be stored tightly in a dry, cool, and dark place; in a humid climate, it is advisable to store it in the refrigerator to preserve the aroma and prevent clumping.
