Fresh arugula
Description
Fresh arugula has a distinct, peppery, and slightly nutty flavor with a hint of mustard, and its leaves are thin, dark green, often with a wavy or feathery shape and delicate stems. It adds freshness and boldness to dishes both as a raw addition and as a quick finish to warm meals. It is a low-calorie source of vitamins A, C, and K, as well as folic acid, minerals such as calcium and potassium, antioxidants, and sulfur compounds that support the immune system, eye health, and bone health, and due to its natural nitrates, it may positively affect circulation. Arugula pairs well with salads, sandwiches, pizzas, pasta, and pesto. Store it unwashed, wrapped in a paper towel in a perforated bag or container in the refrigerator, and it is best used within 3–5 days.
