Description
Fresh mint has an intense, refreshing aroma with a cool, menthol note and bright, serrated leaves of a vivid green color; it comes in several varieties (e.g., spearmint, peppermint), which differ in their level of sharpness and aroma. It is low in calories, providing small amounts of vitamins A and C as well as minerals, and contains antioxidants and essential oils that aid digestion, soothe stomach discomfort, and have antiseptic and anti-inflammatory properties. In the kitchen, mint pairs wonderfully with both sweet and savory dishes, fitting well in salads, sauces, dips, drinks (e.g., mojito, tea), desserts, and dishes with lamb and vegetables, as well as serving as a fresh accent and decoration. To preserve its aroma, store an unwashed bunch wrapped in a damp paper towel in the refrigerator or place the stems in a glass of water; you can also freeze the leaves in ice cubes.
