Description

Carnaroli rice is an Italian short-grain variety with pearl-white, slightly elongated grains, known for its delicate, slightly nutty flavor and exceptional ability to release starch, resulting in a creamy texture with a noticeable al dente center. It is primarily a source of carbohydrates with high energy value, contains a moderate amount of protein, little fat, and trace amounts of B vitamins and minerals such as manganese; as white rice, it is easily digestible and naturally gluten-free, and when cooled, it partially forms resistant starch beneficial for gut microbiota. In the kitchen, carnaroli reigns in risotto, also works well in soups, arancini, rice desserts, and salads when we desire creaminess while maintaining the structure of the grains; for risotto, it is recommended to gradually add hot broth and stir to achieve the perfect consistency. It should be stored in an airtight container in a dry, cool, and dark place, away from moisture and strong odors; the whole grain version should be refrigerated or frozen, as it goes rancid faster.
