Description

Seitan is concentrated wheat protein (gluten) with a dense, meaty texture and a neutral, subtly umami flavor that easily absorbs spices and marinades. It resembles smooth, beige pieces with a fibrous structure that, when grilled or sautéed, can mimic meat in both appearance and bite. It is a rich source of plant protein with low fat content, making it a valuable ingredient in vegan and vegetarian diets, although it is low in lysine and unsuitable for those with gluten intolerance or celiac disease. Attention should be paid to the salt content and additives in processed seitan products. In the kitchen, seitan works great as a meat substitute in stews, stir-fries, burgers, kebabs, sandwich slices, or breaded cutlets, perfectly absorbing marinades and spices. It should be stored in the refrigerator in water or in an airtight container for up to 5–7 days, and portions can be frozen for 2–3 months; before use, thaw in the refrigerator and optionally rinse.
