Gouda cheese or Koryciński cheese
Description
Gouda and Koryciński are semi-hard cheeses with a pleasant, creamy texture; gouda has a mild, slightly nutty flavor and a smooth, light yellow flesh with a smooth rind, while Koryciński is more rustic, often slightly tangy or herbal, can be smoked, and has a fine-grained, somewhat crumbly consistency. Both provide high-quality protein, calcium, phosphorus, and vitamin B12, supporting bone health and maintaining muscle mass; however, they should be consumed in moderation due to their saturated fat and salt content. They pair well on cheese boards, sandwiches, casseroles, and in dishes that require melting, such as gratins, cheese sauces, or baked dishes. Store them in the refrigerator wrapped in cheese paper or parchment and loosely placed in a container, avoiding direct contact with plastic wrap, take them out 20–30 minutes before serving, and consume within 1–2 weeks after opening; freezing whole pieces is not recommended.
