Cream cheese (for the cream)
Description
Cream cheese for frosting has a smooth, silky texture, a creamy white color, and a subtly buttery, slightly tangy flavor that does not overpower other ingredients. Its neutral, velvety structure allows for easy whipping and blending with sugar, cream, or flavors, giving creams, cheesecakes, and fillings a rich, uniform texture. Nutritionally, it is a source of protein, calcium, and vitamin A, as well as concentrated calories and saturated fats, so it is advisable to use it in moderation as an energy and building block ingredient. It works well in sweet creams, glazes, cheesecakes, mousses, and savory sauces and spreads; it pairs excellently with fruits, citrus, vanilla, or chocolate. Store in the refrigerator at a temperature of 2–6°C, tightly sealed, and use before the expiration date; it can be briefly left at room temperature before whipping for better consistency, while freezing alters the structure and requires re-mixing after thawing.
