Grated lemon zest
Description
Grated lemon zest is an intensely aromatic, bright yellow shred with a fresh, citrus scent and a distinct, slightly bitter aftertaste due to essential oils; it is best obtained thinly, avoiding the white part (albedo) to prevent excessive bitterness. Before grating, it is advisable to wash the lemon thoroughly or use organic fruits, and to use a fine grater or microplane for grating. In small amounts, the zest provides vitamin C, fiber, flavonoids, and limonene oil, which exhibit antioxidant, anti-inflammatory properties and support digestion and immunity. It works well in baked goods and desserts, as well as in sauces, dressings, marinades, fish and poultry dishes, salads, and cocktails as an aromatic finishing touch. Store grated zest tightly in the refrigerator for only a few days or freeze in portions (on trays or in ice cube trays with water/oil), or preserve it in sugar or salt.
