Passion fruit
Description
Passion fruit, also known as maracuja, has an intense, aromatic flavor that combines sweetness with a distinct citrusy-tart note; the pulp is filled with yellow-orange gelatinous balls surrounded by crunchy black seeds, and the skin comes in yellow and purple varieties. It is small but incredibly fragrant, making it a bold addition to dishes. Passion fruit is low in calories, rich in vitamin C, a source of beta-carotene (vitamin A), fiber, potassium, and antioxidants, which support immunity, skin health, digestion, and the cardiovascular system. In the kitchen, it is used for juices, desserts, ice creams, sauces, dressings, cocktails, and dishes with fish or poultry; the seeds are edible and add crunch, while the juice pairs well with dairy and alcoholic beverages. For storage, it is best to choose slightly wrinkled fruits as they are riper, keep them in the refrigerator for 1–2 weeks, and the pulp can be chilled for a few days or frozen for longer use.
