Dried orange peel
Description
Dried orange peel has an intense, concentrated citrus aroma with a slight bitterness and a resinous note of essential oils; it appears as thin, wrinkled strips or shavings in color ranging from light orange to brown, often hard and brittle. Nutritionally, it is low in calories, providing fiber, trace amounts of vitamin C, as well as flavonoids and other antioxidants that support digestion and have anti-inflammatory properties; due to the concentration of flavors, it is used in small quantities. In the kitchen, dried peel is suitable for baking, desserts, and cookies, adds character to spice blends, meat dishes, sauces, Mediterranean and oriental cuisine, infusions, and drinks as a decoration. It should be stored in an airtight container in a cool, dry, and dark place, away from strong odors; for longer storage, it can be frozen or refrigerated to maintain the intensity of the aroma and prevent moisture absorption.
