Preparation of ingredients

Take out all the ingredients and prepare the tools: a small saucepan with a capacity of about 1–1.5 l, a wooden spoon, a kitchen scale, a fine mesh strainer (or coffee filter), a milk jug, and a kitchen thermometer (optional). Weigh 40 g of ground coffee on the kitchen scale and set it aside.

Use a kitchen scale to measure the portions accurately. A saucepan with a thick bottom will be best, as it will prevent the spices from burning.

Cooking the spices

Pour 600 ml of water into a saucepan. Add 4 g of cinnamon, 1 g of cloves, 2 g of cardamom, 2 g of star anise, and 6 g of dried orange peel. Place the saucepan over medium heat and heat, stirring occasionally, until the water begins to gently boil (the first bubbles will appear at the edges). When it starts to boil, reduce the heat to low and simmer for 5 minutes — the goal is to extract the flavor of the spices.

Use a wooden spoon to stir. Cook over low heat to allow the spices to release their aroma without becoming bitter. After 5 minutes, there should be an intense scent of spices in the pot.

Brewing coffee

After 5 minutes, add 40 g of ground coffee to the saucepan. Stir vigorously with a spoon to ensure the coffee blends well with the spiced water. Raise the temperature to a gentle boil and cook for 3–4 minutes on very low heat — just lightly bubbling, not vigorously. Monitor the aroma: after 3 minutes, the coffee should have an intense scent, and the brew should be dark and rich.

Stir slowly and evenly to prevent the coffee from sticking to the bottom. This is a key step: cooking for too long (over 5 minutes) will make the brew bitter.

Draining and resting

Remove the saucepan from the heat and let it sit for 2 minutes to allow the grounds to settle at the bottom. Then strain the brew through a fine mesh sieve into a clean pitcher or directly into a serving pitcher. If you want a very clear brew, pour it through a coffee filter.

Use a fine sieve, and if you have a paper filter, pass the brew through it for clarity. Letting the brew rest for a moment reduces the amount of sediment in the cup.

Heating and frothing milk

In a separate pot, heat 400 ml of milk to a temperature of about 60–65°C (do not bring to a boil — small bubbles will appear at the edges). If you want to create foam, use a milk frother or a hand whisk and whip the milk for 20–30 seconds just before serving.

If you don't have a thermometer, heat the milk for 2–3 minutes over medium heat and watch for bubbles at the edges; do not let it boil, as the milk will curdle and lose its sweetness.

Mixing and seasoning

Pour into four cups alternately: first 100 ml of filtered infusion with spices, then 100 ml of heated milk — you will get 200 ml of drink per serving. Taste and sweeten each cup with 10 g of sugar (a total of 40 g) to your liking. For adults, you can add 12–15 g of orange liqueur to each cup (optional). If you are using whipped cream, place a tablespoon on top and sprinkle with a little cinnamon.

Pour the milk over the spoon above the brew if you want to keep some of the foam on top. If you're adding liqueur — do it after brewing the drink, just before serving.

Serving

Serve the coffee in warmed cups, decorated with a sprinkle of cinnamon or a slice of orange. Serve alongside small gingerbread cookies or holiday biscuits — this creates a cohesive, festive flavor set.
