Description
Raspberry juice is an intensely ruby, clear or slightly cloudy drink with the aroma of fresh fruit. Its flavor combines natural sweetness with pleasant acidity and subtle astringency, while versions with pulp add a delicate texture and depth of aroma. It contains vitamin C, small amounts of B vitamins, minerals, and polyphenols, primarily anthocyanins and ellagitannins, which act as antioxidants; it is low in fat but relatively high in calories due to natural sugars, so it is best consumed in moderation. In the kitchen, it is used for drinks, cocktails and non-alcoholic cocktails, sorbets and desserts, sauces for game and poultry, dressings, marinades, and as an addition to chocolate and vanilla.
