Description
Orange zest has an intense, fresh citrus aroma with a bitter-sweet note and a shiny, orange peel with a white albedo layer underneath. It contains essential oils (mainly limonene), small amounts of vitamin C, fiber, and flavonoids, which have antioxidant properties and may support digestion and immunity when consumed in moderation. In the kitchen, it is used to enhance cakes, creams, marinades, dressings, cocktails, desserts, and savory dishes, where it highlights the flavor of fish, poultry, and sauces, and pairs well with chocolate and spices. Fresh zest is best used immediately; it can be stored in the refrigerator wrapped in foil or frozen in an airtight container.
