Dried lemon balm
Description
Dried lemon balm is an aromatic, small, matte-green leaf with a delicate citrus-spicy scent and a mild, slightly sweet taste. It contains few calories, trace amounts of vitamins and minerals, and bioactive compounds such as essential oils (including citral, citronellal), flavonoids, and rosmarinic acid, which exhibit antioxidant, anti-inflammatory properties and help relieve tension and digestive issues; infusions of lemon balm may aid in relaxation and improve sleep. In the kitchen, dried lemon balm works well in teas and infusions, as an addition to sauces, dressings, marinades for fish and poultry, as well as desserts and fruit salads, pairing nicely with honey, lemon, and fresh-sounding herbs. It should be stored in an airtight, opaque container in a cool, dry place away from light and moisture; it is best used within 6–12 months to preserve its aroma.
