Dried chili flakes
Description
Dried chili flakes are small, red or brown flakes with a distinct, spicy aroma and intense flavor that combines the heat of pepper with a slight fruity note. In ground form or as whole flakes, they add crunch and fiery color to dishes, and the level of spiciness depends on the variety of pepper. The active ingredient is capsaicin, which provides heat and has anti-inflammatory and pain-relieving properties, and may support metabolism and circulation; the flakes also contain vitamins A and C and antioxidants beneficial for overall health. In the kitchen, they are used universally as a seasoning for sauces, marinades, soups, stews, pizza, or Asian and Mexican dishes, adding adjustable spiciness. They should be stored in an airtight, opaque container in a cool, dry, and dark place, away from moisture and light; under such conditions, they retain their aroma for several months, and it is best to grind them just before use.
