Caviar (sturgeon roe)
Description
Sturgeon caviar consists of small, shimmering pearls ranging in color from dark gray to golden, with a delicate, slightly salty and buttery-nutty note, and a creamy texture that bursts in the mouth, releasing marine aromas. From a nutritional standpoint, it is a rich source of complete protein, valuable polyunsaturated omega-3 fatty acids (EPA, DHA), vitamins A, D, and B12, as well as minerals such as selenium and phosphorus, which support heart, brain, and immune system health. In the kitchen, caviar works as a luxurious addition to blinis, toast, or sandwiches with crème fraîche, pairs perfectly with eggs, fish, pasta, or sushi, and goes well with a glass of vodka or champagne. It should be stored in a cool place (0–4°C), in its original packaging or a glass container, and once opened, it should be consumed within 48–72 hours, avoiding prolonged freezing, which deteriorates the texture.
