Fresh parsley
Description
Fresh parsley is an intensely green herb with a subtly grassy, slightly spicy, and refreshing flavor; the leaves can be smooth (flat-leaf) or curly, and their fresh aroma adds aromatic depth and visual freshness to dishes. It is low in calories, rich in vitamins A, C, and K, folic acid, and minerals such as iron and potassium, while the antioxidants and flavonoids it contains support immunity, vascular and bone health, and anti-inflammatory processes. In the kitchen, parsley works well as an instant addition to soups, salads, sauces (e.g., gremolata, chimichurri), fish, poultry, and vegetable dishes, as well as an aromatic ingredient in marinades and purees. To maintain freshness, store it tied in a bunch in the refrigerator wrapped in a damp paper towel or placed in a glass of water and covered with a bag; it can also be finely chopped and frozen in oil or ice cubes.
