Fresh arugula
Description
Fresh arugula has a distinctive, slightly peppery flavor with a nutty note and a mildly bitter finish; the leaves are light or dark green, elongated and frilled, thin and delicate. It is a low-calorie plant, rich in vitamins A, C, and K, folic acid, minerals such as calcium and iron, as well as antioxidants and sulfur compounds that support immunity and have anti-inflammatory effects, which benefits bone, eye, and cardiovascular health. In the kitchen, arugula pairs well in salads, as an addition to sandwiches, pizza, and carpaccio, a base ingredient for pesto, an addition to pasta or warm salads, as well as in green smoothies; it is best to add it at the end of preparation to maintain freshness. Store unwashed arugula in the refrigerator, wrapped in a paper towel and in an airtight container or perforated bag, avoiding excess moisture; use within 3–5 days.
