Fresh forest mushrooms
Description
Fresh wild mushrooms have a distinct umami flavor with earthy and nutty notes, as well as a meaty, firm texture; their appearance can vary — caps of different shapes and colors with distinct gills or pores, and short or long stems. They are an aromatic addition to dishes, enhancing soups, risottos, sauces, pasta, meat dishes, and salads, pairing wonderfully with butter, cream, garlic, and fresh herbs. Nutritionally, wild mushrooms are low in calories, contain protein, fiber, B vitamins, and minerals such as potassium and selenium, as well as compounds with antioxidant and immunomodulatory effects. To maintain freshness, do not wash them before storing, keep them in the refrigerator in a paper bag or breathable container, and use within 3–5 days; for longer storage, it is best to dry or blanch and freeze them.
