Description
Fresh broad beans have an intense green color and grow in fleshy, light green pods; when shelled, the beans are creamy, with a mildly sweet, slightly nutty flavor and a pleasant, soft texture. Larger beans may require the removal of the thin inner skin after a brief blanching, revealing an even smoother flesh. Broad beans are rich in plant protein, fiber, folic acid, iron, potassium, and B vitamins, while being low in fat, which supports immunity, heart health, muscle function, and blood sugar regulation. They are perfect for salads, spreads and dips, risottos, soups, pasta, and as a side dish sautéed with garlic and mint. Store broad beans in their pods in the refrigerator in a breathable container and use within 2–3 days; shelled beans can be briefly blanched and frozen for longer storage.
