Natural tofu (firm, in block)
Description
Natural firm tofu in block form has a delicately neutral, slightly nutty flavor and a dense, springy texture with a light, creamy-white color; it holds its shape well and easily absorbs marinades and spices, making it an excellent carrier of flavors. Before use, it is advisable to lightly drain or press it to improve its absorbency and texture during frying or grilling. The nutritional values of tofu include a high content of plant protein (about 8–12 g/100 g), a moderate amount of fat, and a low number of carbohydrates, as well as isoflavones, calcium, and iron depending on the coagulant; regular consumption may support cholesterol reduction, bone health, and protein supplementation in vegetarian and vegan diets. Firm tofu is used in stir-fries, on the grill, for baking, frying, in soups, salads, and sandwiches — it also works great in fried patties and skewers. It is stored in the refrigerator submerged in fresh water, changing the water daily and consuming within 3–5 days after opening; it can also be frozen, which changes its texture to a more sponge-like consistency.
