Smoked tofu
Description
Smoked tofu is a firm, compact block with a golden-brown surface and a pleasant smoky aroma; the taste is distinctly umami, slightly salty and smoky, making it a great substitute for meats in dishes. Nutritional values include a high content of plant protein with low saturated fat, as well as iron, calcium (depending on the coagulant), magnesium, and B vitamins; regular consumption may support muscle building, heart health, and provide a cholesterol-free alternative, although those allergic to soy should avoid it. In the kitchen, smoked tofu works well as an addition to salads, sandwiches, grills, stir-fries, soups, and as a base for vegan spreads or "bacon" made from crumbled tofu. Store in the refrigerator, an unopened package lasts according to the expiration date, and once opened, it is best to submerge it in fresh water or brine and use within 4–7 days; it can also be frozen, keeping in mind the change in texture.
