Tomatillos
Description
Tomatillos are small, green fruits covered with a paper-like, slightly browning husk, with a firm skin and juicy flesh. They have a distinctly tangy-citrusy, refreshing flavor with a hint of green tomato, making them an excellent counterpoint to richer dishes. Nutritionally, tomatillos are low in calories, a source of vitamin C, fiber, and potassium, as well as antioxidants that support immunity and digestion, while having a low glycemic index. In the kitchen, tomatillos are primarily used for salsa verde, sauces, soups, and stews. They pair well with cilantro, lime, chili, poultry, pork, and fish, and are also suitable for roasting, grilling, and preserving. Store them in their husk until use, in the refrigerator in a loose paper bag for about 1–2 weeks; once peeled and cut, it's best to use them immediately or freeze them after roasting, which extends their shelf life and enhances their flavor.
