Chicken liver
Description
Chicken liver has a smooth, creamy texture and an intense, slightly sweet flavor with a delicate hint of bitterness; raw, it is dark reddish-brown and quickly loses its sheen after cooking. It is one of the most nutritious parts of meat — rich in high-quality protein, iron, vitamin A, and B vitamins (especially B12 and folic acid), as well as copper; therefore, it supports the production of blood cells and energy metabolism, but it should be consumed in moderation due to its high levels of cholesterol and vitamin A. Culinarily, liver is suitable for quick frying with onions, pâtés and spreads, braised sauces, and dishes with the addition of apple, thyme, or red wine. It should be stored in the refrigerator at a temperature of 0–4°C and consumed within 1–2 days; it can also be frozen tightly packed for up to 2–3 months, thawed in the refrigerator, and cooked thoroughly before serving.
